Thats exactly right, and certification definitely proves that the guy knows more than the average cleaner in regards to NFPA 96. If you look at the NFPA 96 codes very carefully, you will see how much a cleaner that knows these codes can not only educate the customer, but help limit the restaurant's and their own liability.
There is much more to it then just blowing some chemical in there and rinsing it out, cleaners need to take responsibility for their customer's systems, and insist that their systems are up to NFPA 96 standards.
