BBQ road trip

Doug that's exactly what Im looking for hole in the walls and side of the road joints not the big shiney places. That's why I was asking locals in the areas they know the best places.

What part of Louisianna you gonna be in....my wife is from there
 
Any BBQ is better than no BBQ but those road side stands are the bomb. I don't remember where they are, I just stop when I see them... LOL

When you hit a small town, ask one of the locals.

Me and the wife are going on a bbq/music road trip in a couple weeks starting in the panhandle of Florida then Alabama,Louisiana,Memphis Tenn,North Carolina back down to florida. Any of you guys from close to those locations have any cant miss spots. we have some already but we are kind of flying by the seat of our pants so no definite route yet.
 
If you happen to make it to the Knoxville area I would check out Archer's BBQ in Knoxville. Absolutely fantastic BBQ. I have not had Sweet P's in Maryville yet but I hear good things and they were on Man VS Food some time ago. My wife and I are heading to TX for a wedding during the summer, and I have plans to try several bbq places while I am there.
I actually ate there last night. Pork was OK but not enough vinegar. Tea was instant. Most places in TN that I have been to have mustard in their sauce. I went to a place in Killen, TX that had beef on the menu and they called it bbq. No accounting for taste.
 
Time to open one Tony. You could even filter the sauce... LOL

But what would I do with the sludge?

If I opened a restaurant I would be dead in two years. Lack of self control in that arena!

When you say you were there, do you mean Archer's or Sweet P's?

Ive noticed that mustard is a TN thing. Some people even marinade meat with mustard too before grilling.

I've never tried either one of those places. I'll have to check them out.
