Please read the blogs, TGP you should have fun with this one. they dont know why it burned. everthing there is out of a can.

Some are calling for and investigation... To funny on the blog, sad because someone was injured and people are out of work.

this one hits home, about 6 miles from the house. I go there, i know use the one accross the street.

1000 reasons why a TGIF will burn down-I find it interesting that we are who they turn to for the starters. This is not to say that the cleaner could be part of the chain of events and still cleaning to standards.

The media has speculated the kitchen, but don't they always?

They did say "grease fire", in the news report. I was wondering if that was a fryer fire, or a flare up that got into the exhaust system.

Only time will tell.

Yeah all the one's I have taken over have been in terrible shape. One multiple levels, the set up of the systems are terrible from supreme fans built right next to walls where they can only open about 6 inches, to frayed exposed wires, to fans that are way to large for the curb and are very unstable. The systems were also full of grease which is sad considering they are 4 to 6 week accounts. Looked like they have never been cleaned properly. I have no idea at this point what started the fire out there, but the condition I have found some of these stores is pretty bad and it would not suprise me if the grease had something to do with it. It could be a combination of skimping on mainentance from them to getting taken advantage of by contractors. One of the managers had a few problems he talked to me about and when I asked what his HVAC guy came and did he said how should I know I am the GM of a restaurant. So it goes to show we need to contine to educate these guys to what they are getting for their money. And maybe this fire will put a bigger priority on some things at least for TGI Fridays.

I guess it was grease.

First it was a string of Chili's, now TGIF's. Mom and pops don't get as much coverage, and these big guys are the ones who will implement programs that start to get real attention.

It's like Coke or Pepsi, they don't have to make the stores buy them, the stores know that if they don't carry them it is money out of their pockets. This is what a nationwide practical certification program could do, draw in guys like Darden and Brinker because they know that having practical certification on their hood cleaners will save them money.

The only way to eliminate the useless paper certifications that are out there is unfortunately for fires like this to happen. Once they see how much they are losing, they will want a certification program for their hood cleaners that prove cleaning proficiency and not just a knowledge of the codes.

Did you know in house training is happening as we speak? The maint engineers are going through training seminars.

The only reason i know this is that i clean the hotel the trained at. It was a hilton international, I cant tell you who was training them. I have never heard of the compnay before. They sold them on learning the proper ways, I know the chefs since shes the one that hired us. She found out her guy by there inspection was not doing the job correctly.

I think it will happen, I think education in house is important.

If the maint people got your photos after being certified and educated they might mean more.

Thats funny Ron, I was at a Hilton a while back, he needed some filters ASAP, I took some shots of the ducts while I was there and showed him "I know, I know" he says to me, frustrated; "There is nothing we can do about it, corporate doesn't want to pay more money."

There are too many precedents in history of guys being warned over and over about tragedies that could have been avoided, and nothing was done. Fingers get pointed after the fact, and it's never the guy at the tops fault.

Holla if you love the almighty dolla, its the only thing thing thats gonna change this industry.
