Question on Sealing Brick

I have a job with about 100 sq. ft. of brick that needs to be sealed. This is the sort of customer who wants it to look like I did something(so they want the sheen)... and not charlie.

My curiosity is what you guys recommend for sealing brick both with and without the sheen. And preferably a chemical that is available in 1Gal increments.
