Not too many pictures on here.

I don't have any pictures, but I scraped a 5 gallon bucket full of gooey sticky grease out of the bottom of a Chinese fan once. Even though I had bid a per hour rate, every minute that passed made me wish I had not even taken the job. That was the day I decided not to pick up any new wok style accounts.

I just don't see the point in working your butt off for 5-6 hours and making what you could make in 3-4 hours with any other cooking style. That 5-6 hours doesn't include the time spent picking all of the gooey boogs out of your hair and off of your face. It's not worth the misery to me, but if you dig it, go for it.

I quoted a chinese the other day. All was going well untill I gave him the bid. Then all heck broke loose.

14' hood w/ 7 filters
2 2' hoods w/ 6' lateral duct connecting them and 2 filters.

Has been years since it was cleaned. Sorry no pictures!

The filters were so full of grease, when I put them back in the trough they made a squishing sound and squirted a little grease into one of the woks, eeewwhhh!

I quoted $800 and the little china man hit the roof and called me a Mother F****** American. (funny how they pick up the language so fast when its their money) I busted out laughing took my business card right out of his hand and left him standing there screaming while his wife was slapping him around "I guess for talking to us that way". We are still LOL about that one.

They are tough to deal with.

By the way I don't think your bradley unit cleans all that well if you are showing a clean fan above. Just curious?
 
When they complain about your price at that point bring your price up $100 and look at their reaction. I tell them, I don't complain about their price of Orange Chicken-find someone else if you don't like the price.

LMAO, I remember when I did a similar thing, but the owner turned the tables on me. He offered to pay us in meals at my price. I turned and walked.

What is the right tools for Chinese grease. I would agree with Josh that caller ID is the most important tool you can have in your arsenal.

Please explain what you are using for equipment and welcome to the board.

The above picture is a chinese fan, and the only part not clean is the bottom of the bowl. Maybe you are looking at the little boogers that are left behind, you could spend all night trying to get a chinese fan "perfectly" clean. That fan in my book is clean, other than the bottom. Have you tackled a chinese fan yet?

I'm getting about 3 calls a week from Chinese restaurants, its time for their annual Spring cleaning.:D

Remember how well the Bradley 280 degree steam machine cleans vs. a 200 degree 3000 psi machine. I don't doubt that 280 degrees water will melt chinese grease, I'm sure it will.

I think you need to get yourself one of them thar hook nozzles from those guys in Ft. Worth. Remember we talked about it on the phone. They are great for fan bottoms and the supports inside. After all is said and done we are there to clean, right.

If you say it is clean then, it is clean!

No argument but,

Confucius say: "A picture is worth a 1000 words."

You better get to typing you are about 920 words short. :p

Maybe I should have chose a different picture to post with all the critics around here. I'll try again.

I'd call that Chinese connection more of a disconnection-I don't answer when they call. One got through today though, unavailable number on the ID.

How about this saying-"Cleaning wok grease is worth a thousand dollars" That one is all mine, just made it up. We all know I'd come up short on that one.

Try not to let all the ribbing get to you. If they didn't care about you, they wouldn't elbow ya in the ribbs. The grease boogies in the bottom of the fan can be tough. I know I've said thats enough a time or two on some sticky $h1t before.

Did you get a Hook nozzle , yet ? They are about $16.00 USD.

Can't work without mine.

I have some close competitors on this board so excuse me if I don't give out to many details. But Really sharp tools and sodium hydroxide, Make a chinese job alot easier.]

On the tip of the wand. Have you tried this out to see how it works?
