need information fast.. help!!

I am in need of help on how to clean hood vents ( from hood to fan, and surrounding exterior areas on the roof.) I have been approached by a restaurant chain to do cleaning and maintenance for several locations. I have been reading posts like mad, trying to get as much knowledge as I can, I figured that the people that do this on a regular basis are the ones that could guide me in the right direction. I would also like to know some of the pitfalls and things to watch out for, like not setting off the ansul unit (fire suppression.) I do not want to miss this opportunity, so any help would be greatly appreciated. I currently have a 4000 psi @ 4gpm hot machine. I am sure that is plenty to do the vent and hood, I just need to know how to proceed. HELP, and thanks for taking the time to look at this post.
 
I think this aspect of the industry is too complex and carries with it too much liability to just jump into it overnight!

Perhaps you would be better off sub contracting it to a reputable hood cleaner in your area.
 
Go out with someone who knows what they are doing and do 5 to 10 jobs with them.This will give you some exposure to some of the many problems that can arise when cleaning exhaust.
 
I am not pushing anything but when I went for exhaust cleaning, I had gone to the Delco school for formal training in the codes and standards, and worked with a hood cleaner that was leaving the hood cleaning business...Mike is right, alot to know but vary rewarding when you get rolling...
