In my time cleaning hoods, I only know of one resturant that was written up by the health department for a greasy exhaust system. Grease was dripping on the grill. A chinese place we do (always once a year and sometimes even twice a year!) always gets a 98 or better on the inspection. I guess the inspector does not see the cockroaches or the meat thawing in buckets on the floor. I heard of one chinese place that the health inspector found the Amah using the tile floor as a cutting board for meat. Just to show the chinese do not have the corner on filth, I went into a DQ. As I stood by the grill talking to the owner, he was wiping his nose w/a hankerchief, then picking up a patty and putting it on the grill, then put the bun on the grill and then assembled the burger. I have a good account that receives a "Passed " by the health department. I do not always mop the floor when done and I do not run my stuff through the dish machine. And I never, never consume anything at the place, not even a soft drink in a disposable cup. That place is so bad, that once I cleaned the exterior of the hood w/my chemical and pressure washer, did not even drape the hood. I don't cover the plates when I am in that place, a little chemical just kills some germs.

Think about it, how many good customers do you service that you will not eat at?

just so you don't get the impression that all chinese places are filthey, Hong's Garden in Milton-Freewater is extremly clean, both the front and back of the store. When we are done, he fires up a wok and makes us fresh pork fried rice.

True. All chinese are not that disgusting. And I would drape the plates and utencils even if they were covered in bacteria.(Liability issues)

The Health Dept does seem to get blind and ignorant when it comes to the Hood Systems.
It seems fairly logical that if the Hood is Accumulateing Grease,It will also pick up all the other airborne contaminants and attach them to the grease! They dont see it this way.
After all the Hood is directly above the cooking/food preperation area.
Its not my practice to seek out violators and blow the whistle.
Some times its necessary to keep a kitchen from becoming a Bacteria Farm.

I think it is awful, terrible, disgraceful, and contemptible. It is not as bad, however, as one hood cleaner I heard about recently. This guy runs around catching coyotes so that he can smell their derriere. So far he has caught and smelled 1,000 coyotes. Disgusting.
