Letter from the State fire marshall-Certified Required

I have heard it said that too much regulation is a bad thing, it a ewwww the big bad govt will come in a take over everything. So, please to discuss, what is the difference.

I think I prefer self enforcement. Many Ivy league schools are not accredited. They suggest that their standards are too high to be identified by some measly accreditation all other schools rely on.
I eat at the restaurants here in town who keep their kitchen at a high standard, and we encourage our customers likewise. We still need taco bells, and there is a market for them, but if standards were raised to a chik-fil-a minimum, taco bell would certainly close down.
Let the consumer decide! And I mean decide where to eat, not just who they elect. We don't need the majority oppressing the minority any more.

SO how did this Turn out?

Well, my local inspector just informed one of my customers that the 3 month frequency was not necessary and that 6 months would be sufficient. This is a chicken wing restaurant with 8 fryers and a 12' hood with one fan, open from 11 am to 1 am. I told my customer the inspector was wrong, and that I would not certify the hood past a 3 month cleaning. He decided to take the "Official" frequency and find another cleaner. It's tough enough battling the poor economy and lack of enforcement here in the Upstate, now I have a know it all inspector undermining my suggested cleaning frequency. Who gets to deal with the insurance company lawyers when the place burns? Not the inspector. So...how did it turn out? It didn't here in the Upstate. Hopefully soon it will change.

Kitchen inspections, certifications required..etc. Are all the lowballers gone now? What's next a $500 fee to have an inspector onsite for every job?

Don't think it doesn't cross their mind. It "creates" jobs. When we moved here in 1998 we owned the rights to a car lot franchise. (Sortof like an upscale consignment lot) Before we could get our doors open the city council put us right out of business by passing an ordinance requiring an $18/hr government employee ONSITE during all open hours to check all transactions to make sure they were legitimate. As if it's sOOOOO easy to do illegal car transactions with titles and all.
They also took our plan (because there was no previous classification for that type of business) and made the "fee" for each vehicle on the lot EQUAL with how much we charged our customers - This effectively guaranteed there was no way we could do business there.

Is this what you guys want?

Why can't this be taken care of in the business world without relying on the government to thin your competition?

Ok, I'm done wasting my breath. I'm out of my department I know. Leaving now.

I just want the government employee to do their job consistently. I can take care of my competition if we have a level playing field, and it's my job to level the field, not the inspectors. But if the inspector keeps digging holes in the playing field then we will continue to have the same problems. They should be picking on the hack that skips the rooftop at the 6 month Asian Buffet cleaning leaving a major fire hazard, not the company that sets frequencies according to the NFPA 96 inspection requirements and eliminates any risk of major loss due to grease accumulation.

Ok well got a letter today (Certified). It states that all hood cleaning companys have to be certified by April 2011. Thru the following schools
PWNA, IKECA, CHDC, and Mr. Phil Ackland. If you choose not to, all Business License will be revoked. So now the lowballers are going going gone.:joyful::joyful::joyful:

Well, it's been almost three years now.

Are we to assume that all the lowball hacks are gone and profits have skyrocketed?

Or have the national lowball hacks simply swooped in and destroyed the smaller companies?

I will sit back now and enjoy the sound of the crickets.

There's no money for them to do it
