Ok here is yet another Chinese Restaurant to start the new year with.

That is a really nice looking chinese hood. I noticed how clean the filters are. but what about the other side of the filters. Are they as clean? How hard did you have to hit the filters to get them to break loose? Is this the hood style that allows the grease to drip back into the appliances, thereby saveing money on the purchase of cooking grease? I serviced a Chinese place last week. I upgraded the fire system 21 months ago. At that time the hood needed to be cleaned. It took 2 1/2 hours to service the fire system and they complained about every thing, price, time to service, the 3 new nozzles (old ones plugged w/grease), new nozzles seals. Then they did not want me to take the old parts. But I got paid in cash, took the guy 10 minutes to count out the cash. I think I saw a tear in his eye. Then we discussed the defiencies I found. They added a fryer, and the plenum piping came loose. Service report w/defiencies sent to property owner and local FD.I put the filters in so they would drain. the China man immediatly wanted the dirty side out. I refused to comply, so he had to climb up and and change them. Ever notice how filter placement is so important to them, but the amount of grease is not important. The filters have not been cleaned for at least 2 years. But the food was good, and the rest of the place was somewhat clean. At least they were not using the floor as a cutting board for meat.

Most likely the meat is thawed and butchered on the ground in the alley - uses less space and no cleanup.

China is divided into dozens of ethnic communities and by scores of dialects. Every province has its own local speech. Only this century has their been a common language imposed on the nation. Chinese is an idea based written system. Each individual character is a separate morpheme (unit of meaning), rather than a sound. Counting older forms there are over 100,000 Chinese characters. Over 10,000 of these are in modern use. Compare that to from between 16 and 60 symbols to memorize in most phonetic alphabets. While generally each Chinese symbol has an individual meaning, most characters must be paired with other characters to form "words."

That is why we have such a hard time communicating. lol

No! Not dog on the menu. Well, ah hopefully not.

Chris In the last picture I see a mesh filter in the filter bank on the left. Thats not up to code!! Better sell em a baffle filter.

I truly admire the work all of you Greaseballs do. I am just curious (and then I'll end the hijack if some kind person will answer my ignorant question) what causes the Chinamen's systems to always look so grotesque?? Is it a different species of oil they use, or what?? I ask as a concerned consumer of vast amounts of chinese food on a regular basis. Why are all the chinese people so skinny? The systems make it appear the food is unhealthy, but most chinese people are built like AIDS victims. Curious.

1. A lack of proper maintenance.
2. Peanut oil used to cook at very high heat used in combination with water while cooking in the Wok which produces lots and lots of thick grease laden vapors(& steam) which passes through the ducts and as it passes through it coats the ducts with oil. The ducts then need to be cleaned regularly
3. Back to #1.

Many Many different types of coking produces different types of grease. It is the oil/vapor and intense heat which makes the chinese grease difficult.:eek:

Check out the 3rd Pic it has a rain eve all the way around it and ya cant see it from the picture but it connects to the rain down spout.

These are great pictures.
 
....So is there anything a consumer should take from these photos in relation to the effects of chinese food?? Water vapor and peanut oil....that doesn't sound too bad. I am just picturing the insides of my intestines looking like these photos.
 
Get your intestines pressure washed each quarter and you should be okay.
 
Don't listen to Grant, he is just funnin' ya. Try a bit of Sodium Hydroxide just after eating at the Chinese place. That way the grease won't build up and Grant won't have to stick that wand down your throut.

Josh, is the duct in todays picture MetalBestos? Metal Bestos is listed for woodstove piping, rated to 3,000 *F.

Mtngoat, I see 2 links only. I see the Ansul scissors link holder and I see the link holding the damper door open. Is the 3rd link hiding under the grease? The damper link is to be replaced yearly, as per Globe Technologies.
