Dumping the Water

After cleaning houses, decks, and truck fleets, I've decided to try restaurant hoods. I've studied NFPA 96 and read posts here. A lot of very helpful information. I placed a bid and received the job for a busy restaurant they want cleaned every two months. Everything looks like it will go ok, but I am curious as to where you dump the water. Is it ok to dump it down the sink, as long as you run hot water and a little degreaser with it? How about down the toilet? Or the floor drains? A little bit more your professional insight will be greatly appreciated. Thank you.
 
A drain that goes to a grease trap and sanitary sewer, try to filter out any heavy, chunky grease
