After looking into the standards and the compliance regulations that the Boston Fire Marshals are trying to set up, I see a real problem. For decades they have allowed systems to be grandfathered. Some were ok some not. Thats an issue that they created. Now they want the hood cleaner to notify them of any non compliant system. Thats gonna be a lot of restaurants that will come up against some serious expense. I am sure if this is enforced to the letter many will be forced to close. Some will be able to comply and some not. Do we think the the AHJ will enforce this on everyone?
Think about the malls with all the winding duct within concrete walls. Will they be forced to comply? One thing for sure, our names will be on the report that sinks them or causes them great expense. We are being put in an awkward position, dont you think? We fill out the compliance report and send a copy to the Fire Marshal. He responds, and enforces the codes, and who do you think is gonna bear the brunt of the customers anger. They sure as hell aren't gonna thank us. I wonder if they might find another hood cleaner? This is the rock and hard place senario.
Have you seen the grease comb that indicates a critical grease buildup? A burger joint generates that in one day.
