Kitchen Cleaning (floors & walls)

I was asked to do a kitchen (in a cafeteria) this wknd and the guy wants the walls (painted cinder block) and floors done. What kind of chemicals should I use? I've got housecleaning and concerete wash but am thinking these probably won't do since it IS a place where food is handled.
 
You will probably need some kind of degreaser. Get some from a restaurant supply, don't go for the home depot wash everything degreaser. The problem is any good degreaser will likely damage the painted walls, but if they have grease on them you will need something to cut it. Experiment with the strength, you may not need it as strong once you get away from the cooking area.
 
Cover important areas in plastic. Use hydroxide based cleaner. Steam clean and/or use rags where necessary.

Let me add to what I said earlier. The painted walls are likely to be damaged to some degree during the cleaning process, unless you can clean them with 409, warm water and minimal pressure. (not likely to happen, but maybe).
Make sure they know this and get it in writing before doing the job. The paint around the cooking area will be damaged already if it has had any degree of grease on it. If they are not planning to repaint the walls you may want to consider a weaker cleaner for the bulk of the work. I know this contradicts what I said earlier, but I should have asked some questions before answering.
