Corporate McDonalds

Grease Police President
I just started servicing a patch of corporate McDonalds restaurants. The lady in charge has told me that McD's sometimes doesn't allow hood cleaning if it doesn't fit the budget. She has agreed to pay a pro rated charge for months over the 3 mo frequency. In other words if it goes 6 mo they pay double.

This seems kind of funny to me and I was wondering if anyone else has had this experience with them.

They also require an armed security officer during the cleaning, seems a bit excessive, but they claim "company policy".

Josh no on both. They are set up on 90 days or less, depends on the owner. I would bet that she would not pay 2X.

Armed security officer-not in the company rules. I service several that could need a gun or two.

The manager could mean local "company policy".

I helped clean a McD's last night. No security guard. This is a 24 hour McD's and the previous company went out of business so this was our first time cleaning it.

This particular McD's was at least 30+ years old and has been remodled several times.

Had a total of 5 grease exhaust fans, but 2 of them weren't being used. We checked them and they had been previously cleaned and in disuse so they weren't cleaned.

It had been at least 6 months since it was last cleaned and as you know should be about 3 months on a 24 hr. operation. The hood above the fryer looked like it hadn't been cleaned in at least a year, or if it had been cleaned, they must have hit the high spots.

Since this was a 24 hr operation with the crew standing around waiting for us to finish, we gave it a really good once over this time, and will more thoroughly clean it the next time on a 3 month frequency. That is we didn't bid the job to clean for 6 hours, we bid it for 3 hours.

Of the fans on the roof, 1 had a hinge kit but the chain was about a foot too short and it limited access to the duct. That is the fan was tilted at about 80' when it should be at about 110' so that one could clean down the stack.

The other fan was accessible, but the hinge kit was broken and the wiring looked to be about 10 gauge single strand wiring that was too short and was easily pinched between the base of the fan and the stack. At least one could easily clean the stack, although their were large gaps at the top which would allow large volumes of water to leak on the inside roof if we hadn't been careful.

The third fan was right up next to an airconditioner (about 12 inches) and it had a broken hinge kit installed the wrong way so that the fan tilted into the air conditioner. There was no way to tilt it away from the A/C unit due to the length of the conduit connected to it. So their was no good way to access the ductwork to clean it.

With the low clearance hoods I suggest that you use an 18" flexible wand to assist cleaning the hoods and up into the stack. Also, I would suggest the use of a duct spinner to facilitate cleaning the ductwork.

Overall, things went smoothly and we made very little mess so their was very little clean up and the crew quickly helped up reposition the cooking appliances and re-ignite the pilot lights.

Pictures to be attached.

If we find two fans on a roof that are clean one should determine why. We run across this from time to time and it could mean that the other systems are picking up the slack of the two downed fans. In any case one should determine the reason and list it on your report, so that both you and the accout are covered.

Exactly. In the case of the 2 fans they were clean. They had been decommissioned and were ultimately just back up fans.

They were dusty, but grease free.

She's gonna pay double on this one, it hadn't been cleaned in 7 months.

The funny thing about the security guard is that this patch of McDonalds is in one of the nicest parts of the surrounding St. Louis area.

He basically guarded the store from people trying to order food, and cars running over my hose.

The guard is costing me 37.50 an hour, with a 4 hour minimum. I'm charging them $50 an hour to cover cost and unecessary inconvenience. Maybe I should recommend 2 security guards:D

Why should you have to pay for the guard? Just block the lane and put a sign up. Whats wrong with you people in St. Louis anway? Tie a goat in the lane-that should work.

RustyAce,
Those are great pics. Do you guys always take before and afters?

Seems like a valuable asset if a fire does occour down the road.

Welcome to the world of Corporate McDonalds. Where the rules at time seem to be made up as they go along and are always for their convenience. All of my stores are three month intervals and if we get behind they let us know about it, but if I show up to a store three times and they refuse to let me work, for what ever reason we have all heard a million time all those people who were just down my back because I was late on a few store must drop of the face of the earth because I cant get in touch with them.

What I am saying is expect it to be a one way street with all the crap coming your way, make sure you charge enough to put up with the bull***.

Rusty you described about 50% of the McDonalds I seen, they all have something to make you ask why

What's weird is that the manager was proud of how different McD's was from everyone else.

We encourage every person that we train to take before/after pics. It's the way to go with corporate accounts. That way they know it was clean.

more on McD's

Rusty , I like your pics. But I want to see pics of Rusty all Greasy as the newbie on the job. Ya gotta pay your dues!

A word of advice , Be careful with that turbo nozzle, accidentally hit a fuse able link and you will dump the system.

We pulled up to our last stop , McD's, last night. And the manager says " Man they broke a water-main and we don't have any water, hope you have some on your trailer. CPL was working down the street still when we left.

We cleaned 3 systems , 2- fryers and 1- grill , thats fans, ducts, hoods with less than 175 gals. The maintenance man said he would rinse the roof later when the water came back on. That usually takes a large bit of H2O. At the end we even washed off our tools and rinsed parking lot by the back door, and filled all the available buckets with hot water for them to use.

It really helps to have the right equipment , tools and some kickarce degreaser.

I'm taking off and going on a road trip, be back Tues.

The one thing that is the same everywhere is people, as long as people are involved you will always get the "I didn't know you where coming can you come back tomorrow" if we can only remove the human element we would all be better off, errrrr maybe not!

Robots, thats the answer.

Have you seen the new drive through drink dispensers at those McDonalds? I guess they were wasting too much time scooping ice and pressing automatic cup filling buttons. They had to go fully auto on the cup filling process.
