I helped clean a McD's last night. No security guard. This is a 24 hour McD's and the previous company went out of business so this was our first time cleaning it.
This particular McD's was at least 30+ years old and has been remodled several times.
Had a total of 5 grease exhaust fans, but 2 of them weren't being used. We checked them and they had been previously cleaned and in disuse so they weren't cleaned.
It had been at least 6 months since it was last cleaned and as you know should be about 3 months on a 24 hr. operation. The hood above the fryer looked like it hadn't been cleaned in at least a year, or if it had been cleaned, they must have hit the high spots.
Since this was a 24 hr operation with the crew standing around waiting for us to finish, we gave it a really good once over this time, and will more thoroughly clean it the next time on a 3 month frequency. That is we didn't bid the job to clean for 6 hours, we bid it for 3 hours.
Of the fans on the roof, 1 had a hinge kit but the chain was about a foot too short and it limited access to the duct. That is the fan was tilted at about 80' when it should be at about 110' so that one could clean down the stack.
The other fan was accessible, but the hinge kit was broken and the wiring looked to be about 10 gauge single strand wiring that was too short and was easily pinched between the base of the fan and the stack. At least one could easily clean the stack, although their were large gaps at the top which would allow large volumes of water to leak on the inside roof if we hadn't been careful.
The third fan was right up next to an airconditioner (about 12 inches) and it had a broken hinge kit installed the wrong way so that the fan tilted into the air conditioner. There was no way to tilt it away from the A/C unit due to the length of the conduit connected to it. So their was no good way to access the ductwork to clean it.
With the low clearance hoods I suggest that you use an 18" flexible wand to assist cleaning the hoods and up into the stack. Also, I would suggest the use of a duct spinner to facilitate cleaning the ductwork.
Overall, things went smoothly and we made very little mess so their was very little clean up and the crew quickly helped up reposition the cooking appliances and re-ignite the pilot lights.
