Clean Air Vortex Ductwork Cleaning Kitchen Exhaust

We cleaned a fan with something like that installed. It was not in the duct, but after an inline fan on the roof. It was previously cleaned by facilitec. It looks exactly like this, except the order of operation. The unit we cleaned did keep most of the grease off the roof, however, it had some serious flaws. The worst of which, was that the grease drain pipe clogged on 2 of 3 fans and that led to a nice 7 gallon pool of grease in the bottom of each drum. Aside from that, it was apparently too hard for the Facilitec crew to clean around, so the ducts and fans had not been cleaned for an extended period of time.

I'm sure there is something to all of these "replace your cleaner" products, but demand for these devices just suggest to me that there is a greater demand for good, thorough, and professional hood cleaners! I don't think I have a single customer willing to pay all this cost upfront, hoping that this will work, especially when we get the job done right, on time, and leave the kitchen cleaner than when we got there.
 
I thought I saw this on Omi before.. Could be wrong.. However, this system has to much liability attached and will pose major maintenance issues in the future.. If you are like me I have not yet seen a pipe not clog with grease. To much of a fire hazard, and very limited to some systems.. Over-all I would give an E for Effort, but wouldn't have any of my business names attached to it.

We went back to clean the system for a second time with this type of containment on it. As I said before, Facil was previously cleaning it and the drain pipes were clogged. We had successfully unclogged them and they were still unclogged on this second cleaning. I think if you clean it right the first time and keep it clean, this system might work fine, but that can be said for any well maintained system!
I wouldn't say it cleans itself... Maybe that's why it had gotten in such bad shape, the previous cleaners thought it would clean itself...
