Baking sheets

I got a call from save on foods about pressure washing baking sheets and the racks. I have a meeting with the maintenance supervisor on Monday, he said there is a contract for all the chains in my area. Any help with what chems and a proses would be great. My machine is 3500x4gpm and 220 degrees and I have 2 cold waters with the same rating. Thanks guys
 
I have done baking sheets before. Some have never been cleaned very well before. The sheets will have baked on residue that is stuck on like teflon. Hot water helps, caustic helps, and believe it or not use a turbo nozzle. They may not come sqeaky clean (disclaimer on bid). Racks are usually easy.

HOT WATER ONLY!! I have done the racks for Albertsons bakery dept, hot water takes it right off.
 
Oven Cleaner? Which is caustic so maybe caustic? I would want the cleaner to melt everything and only have to rinse. I can't see that residue that Kemp is talking about coming off without soap/caustic/etc. Maybe Nick hit a high enough temp to do it. Get some of their pans and experiment! Please post if you do the job, sounds like an allright gig.

The store I did it for said "NO CHEMICALS". They wanted me to use water only. Oven cleaner is basically caustic which is also what most of the greasers use on kitchen hoods. It would have made a nicer job if I did use a caustic mix or some oven cleaner.
 
ZEP has a green product and is FDA approved, I used it on some hoods and works good the name of it is FS Strike Three.
