“This seems a little high Chris...for such a small kitchen/oven/stove area.”
Chris:
”Yes you are right it is a bit high the first time. Mainly because it has not been properly maintained in the past and requires additional work to bring it back up to code. Previous cleaning services have only addressed areas easily seen/ reached by hand and have simply skipped cleaning the actual ducts leading up to the roof as well as the fan on roof. I was actually called down there in March by Fred as well however no work was done by us then either and it is now dirtier than before.”
Mr. Miller:
“What code are you talking about? We have fire marshals in all the time, and no problems with it.”
Chris:
“Attached are the NFPA Guidelines which is what we use to determine the
overall fire safety of a kitchen exhaust system. The specific sections, which apply to your facility, are 11.3 (inspection schedule), and 11.4.1 and 11.4.2 (Cleaning of Exhaust Systems). The fire marshals have probably not looked up into the hood and duct, which is why you have not been told to clean it up. Attached are a couple of photos I took during my inspection which should help to illustrate what I saw.”
