Ok, lets hear what you all boys think about these hoods. Do they need cleaning? Can they be completely cleaned ? Do you all know what the major flaw with these hoods is?
I do not do hoods but have heard the hood guys mention that that system will not do a very good job, just mediocre so for some that might be good enough until the building burns down then they can collect the insurance and sue the company for a system that did not do what it advertised.
To start with Waterwash hoods are complex systems that must be working properly 24 hours a day to provide a benefit to the customer. The wash cycles of the systems must believer a chemical wash at the prescribed time or times a day depending on cooking volume and so on. The vertical and lateral systems should be inspected and cleaned when build up is evident.<O</O <O> </O> These systems were not designed to take the place of hood cleaners, but rather add an extra margin of control over unexpected issues. <O></O>
Keep the nozzles clean, make sure there is plenty of G-510 in the container, keep the water wash system maintained regularly, and you will not have any problems with water wash hoods.
