One must put a perspective on the problem. We live in a country of 300 million people. Just within my market there are some 12 thousand restaurants. A very small percent of fires in this country are restaurant related. Within this small percent, arson is the primary factor. The present left can be put at the foot of the owner and another percent to the lack of cleaning. An even smaller percent can lie in the hands of the cleaner.
My point is every time a fire truck rolls it is not going to a restaurant. To put this issue at the foot of the cleaner just does not hold up to the facts.
