I went to this place yesterday.
3 hoods, and a crazy bunch of laterals in the ceiling. It is a national chain of chicken places.....not Col. Sanders!

It took me 25 min just to go from the restaurant - to security - to mall mgmt - back to security - to the roof - to the fans - back to security to retreive my ID.

There are 3 hoods with a crazy bunch of laterals above the ceiling.

Looks like every mall I've been to. The question is can you get close enough to use the proper equipment. The problem I find at malls is sometimes you can't run hoses from the truck ( to far) and they have a poorly maintained small hot water heater that is pushing cold water by the time they finish cleaning up at night.
 
Some of the malls have a elevator that goes to the roof.
Get yourself a smaller hot water machine and hook into there cold water and plug into there electricty and have at it. I cant imagine you couldnt park along side this mall and drop a rope and pull your hose on up.(keep in mind this is cow town compared to where you are) How many stories are we talking about.

Sometimes you can take your equipment inside (if small enough) and drop a line through the duct and pull your hose up through the duct, service fans, around roof top and all. This only works if you dont have to many twists and turns.
Be careful of the fire sytem when your doing this. Some of the ducting sytems have Hi temp. probes in them. Dont spray them to much and dont break them or get hung up on them. Its usually looks like a Rod protrudeing through the side of the duct above the plenum. There may be others If its a large system.

This mall is fairly easy but I know what you mean. Running 1000 feet of hose is impractical.

We have small / more portable units too but somtimes that nice bid machine is really needed.

You can pull up to this place and probably only need 250 - 300 ft of hose for the roof. Even less for inside and a nice back hallway right out to the truck.
 
There have been a few times when I wish I had more punch.
Usually chinese. How many feet can you run before substantial loss of pressure?

I run 200 foot hose on the whitco.. It is 3000 psi on the guage at the machine and I only lose about 250 psi....
We Clean Chik-Fil-A at North Park Mall and Have no Problems. I take the whitco (hose ) on the roof. And JT cleans the inside with the small Homemade machine.. Talk about water and steam.. The Manager almost freaked out.. 3000@4gpm 210 degrees comin down the duct and 2750@2.5 gpm at 220 degrees on the hood and plenum all at one time .. Looked Like a Sauna in the Mall.....
 
Grant you are right.
Running a lot of hose on any machine also lowers your water temp.

How much hose for a substancial loss of pressure? - depends on the machne
maybe 500 - 600 but I have noticed the drop in temp more so than the presure.
