need some help here, going to price a large chain of burger joints and out of the 12 or so ive seen all the canopies are painted inside and out, im wondering what or how would be the best way of cleaning the canopies with out harming the paint, i would think that caustic and heat would damage the paint, id really like some input on this one, id really like to get this account so any help would be appreciated

Sounds like a Wendy's. I have not done any but have seen a few. First I would let them know that you will try to not harm the painted surface, but can't guarentee anything. to clean the painted surface I would only wipe it with a mild detergent, not sure how to shield the paint when cleaning the duct or the plenum, I would have to see the hood for that.
 
I Have done a few painted hoods, but only after tlleing the customer that the chemical may/will take the paint off. Then make sure they do not expect to repaint the hood. If they question why
1. The new paint will not match the old paint.
2. The new paint will not stick very well.
and the big reason
3. The new paint will fall off into the food, and they will get written up by the Health Department.

The best reason, it take too much time to paint.

I came across a account last year who painted the hood black and covered up the grease so that he could pass a heath department inspection. He did pass, then sold the unit to a Oriental who is now using us. What a mess-the thing is like working in a cave and the chemicals played hell with the paint. After three cleaning it still looks bad-but it is "FIRE SAFE".

It takes all types.
