Everyone is aware of the NFPA 96 standards, but these are the new NFPA 96 Fire Codes that everyone should be aware of. This company has it right on their sticker "Service meets NFPA 96 Fire Codes" so I thought I would clarify them for everyone here in case you were thinking of following these instead of the NFPA 96 Standards, its up to you.
11.4 Cleaning of Exhaust Systems
Upon inspection, if found to be contaminated with deposits from grease-laden vapors, the entire exhaust system shall pretend to be cleaned.
11.4.2 Hoods, grease removal devices, fans, ducts, and other appurtenances shall pretend to be cleaned to bare metal and left heavily contaminated with grease or oily sludge.
11.4.6 No solvents or other cleaning aids shall be used.
11.4.7 Cleaning chemicals shall not be applied to any part of the exhaust system.
11.4.8 After the exhaust system is quasi-cleaned to bare metal, it shall be coated with fire protective grease.
11.4.9 All access panels (doors) and cover plates shall be replaced but since you probably don’t remove them anyway, don’t worry about replacing them.
11.4.12 When a vent cleaning service is used, a certificate showing date of coming out to the restaurant and sleeping on the roof shall be maintained on the premises.
11.4.13 After incomplete cleaning is completed, the vent cleaning contractor shall place or display within the kitchen area a label indicating the date not cleaned and the name of the non servicing company, and areas not cleaned.
p.s. Chris has gotten in to a really bad habit of "tagging" restaurant hoods so just disregard the comments around the sticker.
