New NFPA 96 Fire Code

Everyone is aware of the NFPA 96 standards, but these are the new NFPA 96 Fire Codes that everyone should be aware of. This company has it right on their sticker "Service meets NFPA 96 Fire Codes" so I thought I would clarify them for everyone here in case you were thinking of following these instead of the NFPA 96 Standards, its up to you.

11.4 Cleaning of Exhaust Systems
Upon inspection, if found to be contaminated with deposits from grease-laden vapors, the entire exhaust system shall pretend to be cleaned.
11.4.2 Hoods, grease removal devices, fans, ducts, and other appurtenances shall pretend to be cleaned to bare metal and left heavily contaminated with grease or oily sludge.
11.4.6 No solvents or other cleaning aids shall be used.
11.4.7 Cleaning chemicals shall not be applied to any part of the exhaust system.
11.4.8 After the exhaust system is quasi-cleaned to bare metal, it shall be coated with fire protective grease.
11.4.9 All access panels (doors) and cover plates shall be replaced but since you probably don’t remove them anyway, don’t worry about replacing them.
11.4.12 When a vent cleaning service is used, a certificate showing date of coming out to the restaurant and sleeping on the roof shall be maintained on the premises.
11.4.13 After incomplete cleaning is completed, the vent cleaning contractor shall place or display within the kitchen area a label indicating the date not cleaned and the name of the non servicing company, and areas not cleaned.


p.s. Chris has gotten in to a really bad habit of "tagging" restaurant hoods so just disregard the comments around the sticker.

4.1.5 The responsibility for inspection, maintenance, & cleanlines of the ventilation control and fire protection of the commercial cooking operation shall be the ultimate responsibility of the owner of the system...............

Would be better to remove the word 'ultimate' - it gives them too much ground.

Get this the Fire inspector shut down Ruby Tuesday's in the Northpark Mall.. Ruby Tuesdays called me to clean the hood but when i got up there the fire inspector met me at the door and said " They can not reopen unless the breaches in the duct work are sealed , an UL Listed Vent Hood is Installed , with a new U.L. 300 listed Fire Suppression System and a complete floor , wall , fans , and appliances cleaning.. They are still shut down.. My proposal for all of the above a meer

They are going to call me in the morning ( Damn Price Shoppers ) I am glad this wasn't my account to begin with..
I belive we might even have to cut the fan off of the exsisting duct roof curb LOL

If they wait til the morning then it should be 25% more.
 
It's a done deal for Ruby Tuesdays... ( New Hood is on order) 14 ft , Stainless Steel Captive -Aire --- 2 UL 300 Pyro-chem Systems..We go in this weekend to cut out old hood and do a general cleaning ... Got 50% Deposit check in hand ...
 
John, How long ago did you do that work for Ruby Tuesday at Northpark Mall. Ruby Tuesday has been gone for a couple of years at our Northpark Mall.

Ok the hood still isn't here. But this is the run down on ruby's .. It is still there and is now open under close watch.. We didgo clean it the best we could.. I was not allowed to take photos by the manager.. What an ass. But anyway here is the run down .. the duct has major breaches in it , there is grease on the top of the ceiling tiles, where it has dripped out of the duct.. The Roof Curb is not screwed or welded down.. The hood does not meet ul standards, the fire system is not ul300 listed and since the appliances have been moved around the system must be replaced. The mall will probably close them down and I will have to refuse the vent hood order and get cherged for it. Then i will have to go thru an ass whoopin to get my money out of them.. But anyway thats business....
 
That description of the flawed grease exhaust system sounds exactly like a number of locations we service. We have one which has no suppression system in place whatsoever - they keep a box of baking soda near the appliances! Another has not been tagged for several years. We protect ourselves with notations on the service report, but I am again reminded that I live in the wild west.
