I have a hood roof related question.

Why is there so much grease one my customer’s roofs? Is the exhaust system broke dirty or just not working properly?

And how much is OK?
 
Good question, when I run into this on bids, my first question is ! When and who serviced the system last? If the system is properly maintained you will have some grease on the roof. However large amounts of grease run off indicates lack of regular service based on his cooking volume.

Some system are old need repair and will look bad after two weeks. The stores try to limit cleaning by the use grease collections devices similar to drip pans, buckets, grease pillows and even kitty litter.

Sound like the system is working well. Where do you think the grease goes after it reaches the fan. It doesn't just evaporate. It build up in the fan bowl and is sprayed into the air. Hopefully not too much but.....There should be a grease box on the fan to collect the grease and if they want to be really efficient, some grease pads around the fan. They collect grease that leaks from the edges of the duct if it leaks and also collects the grease when the grease pan fills up.

This usually is a result of neglect, either your customer is not cleaning it regularly or the company cleaning it is leaving the mess there after the cleanings.
 
If everything is working the way it was intended, one should not have a excessive amount of grease. The rational of the filter system in the kitchen is to collect a good portion of the grease. If the system is a waterwash it will collect better than 98% of the grease, the key is keeping them tuned.
