Part of my business is restaurant cleaning and I have noticed that some will follow the codes, other will put the cleaning off as long as they can to get bigger bonus. Part of quarterly payouts are based on restaurant
expenses. It maybe more about getting bigger pay check in some cases...on the other hand I'v seen managing partners spend hundreds of dollars keeping their restaurants clean and their lawn looking nice and having contracts with hood cleaning companies.
Some these smaller restaurants, a cracker box type...like the one I saw last week had grease running down from the roof fan off onto the grass, in plain sight. It was like normal thing for them...It was a Chinese cracker box. I'm thinking to myself how is that the code enforcement
officer doesn't see this gease running down the roof ten feet from road.
