The funny thing about this is that the company that takes care of this place is primarily a fire supression company.
Why they offer "cleaning" - I'll never understand.

The build-up acts as insulation thus preventing release at the designed temp rating. I wonder how much this defeats the purpose of the link and increases hazard. This would be a good tool to have in our info bank - can our experts out there shed any light on this? Come on, we know who you are!

rooftop grease containment

How would you apply the CB-125 on the roof in the attached photos?

So what is the problem? That is some of the finest grease I have seen. Notice how the grease has a thickening agent so it stays on the roof to act as a pigeon trap, and does not run off the roof onto the ground. Some times I think you are too picky.

I'd make more comments, but need to fix a stove so Roberto can fix tacos today.

Usually they'll look nice until you walk by the unmaintained dish area grease trap that smells like dead meat, or drop your pen by the fryers and lose it in the pile of month old fish and fries underneath. But you can usually never smell anything in the dining area, so I wouldn't worry about it, eat away. ;)
 
Yeah Ron eat away, don't let the fact that all of us have sworn off eating out ever again bother you.

Ok guys what's up with the hood cleaning and fire protection company thing.. I have been in the hood cleaning business 14 years , the fire equipment business 14 years, the appliance repair business 12 years, My Company currently installs pyro-chem systems and vent hoods.. Here is the idea behind this.. Ok you go clean your average 10 foot vent hood for abut $ 300.00 bucks ( MS PRICING) then you leave... But wait the hood is clean... Lets offer fire inspection to the customer he has five links and a system... lets see there is another $ 120.00 in less than 15 minutes.. The he has 4 fire extinguishers there is another $ 30.00 in 5 minutes.. Now your up to $ 450.00 bucks..
Here is the best reason of all .. all NFPA fire code require fire systems to be inspected every six months.. so if he doesn't let you clean the hood in 3 or 4 months... You Know at six months you got him... SEE.. Also JUST fire equipment companies charge more than you do... SEE
Add the appliance service with that ... and this customer is yours... I Currently do a restaurant in jackson where I Clean the Concrete, The Kitchen Floors , The Appliances, The Fire Equipment inspections, Service check all of the appliances, and clean the vent hood and surronding walls for 1600.00 every 3 months.... Now suppose I Just Cleaned the hood >>>>> Look at all the money I am leaving on the table...
 
How about toilet mints, air freshner, grease traps, floor mats, air filters , cooler coils, drains, ceiling tiles, parking lot painting, shrub trimming, grass cutting, mulching, light bulb changing, upholstry repair, carpet cleaning, dusting, and on and on. You could just park an RV in the back lot and live there, then you'll have no mortgage or homeowners insurance. Man I need to look into this. ;) :p
 
Don't forget extermination,,, Caustic Soda will kill the crap out of roaches... I cleaned a casino one time and they had that white plastic wall under the vent hood.. a peice fell off during a cleaning and millions of them little german roaches started coming out so I shot them with caustic soda and it killed everyone of them ... I told the head chef that bug killing was an extra $500.00 charge LOL..

I think I got your picture beat with this one. The hood cleaner doing this service, I am sure, would leave this store with piece of mind telling himself "Job well done! There is no grease build up here and I can sleep well tonight. I am so proud of myself!"

Or maybe the grease and carbon build- up is a new way of preventing premature wear and tear on the ansul system. Doesn't it say the following in either NFPA 96 or maybe the ANSUL service manual:

"All fire supression fuse links, cables, brackets and piping shall be 100% enveloped in grease and carbon buid-up. If any part of the fire supression system is grease free the hood cleaner shall go to the grease bin, retreive several gallons of crusty grease, and generously apply said grease to fire supression system. If any part of above mentioned system is left without the proper grease build up on it, said hood cleaner shall be liable for any malfunction or improper discharge of system"

That must be the manual the last guy who cleaned this hood was using as his guidline!
