Every deer is a good deer my grandfather always said and its really true out here. You really have to work for them here in the desert. This deer is from last year and I never weigh them but me and my buddy both guessed 90 lbs - and thats a good whitetail out here! Headed out day after thanksgiving.



 
If someone had one second to point me to how to post pictures that'd be great and I could show of this deer. Thanks.

DJ you must have filled that tag in less than 2 hours into the season. Good job.

I missed bow since thankfully we are busy with work. We will start our firearms season next Sat. We usually pay to process most of our deer but this year we decided to buy the additional gear and butcher them all and make our own sausage. With tags at $24 and processors charging $85 it's starting to get pricey filling the freezer. With family we will do maybe 6-8 deer total. We are blessed with big corn fed deer. Seems like we have quite a few hunters on here so I wondered if anyone had any good sausage recipes to share. I like brats and Italian but always looking for recipes or brands of sausage mix. I've found plenty of mixes online but no reliable reviews. You hate to waste that much work and venison on a big batch of sausage.
 
I took this one out at 200 yards, using my Socom 16.

MUCH MUCH easier Tom , , , next time make a cut where there Achilles tendon is put a stick through there and hoist them up
start on the hind quarters and get the fur started then most of the time you can just pull the hide straight down. get your back straps,

and cut off what you want fomr the hind quarters! the best way to take care of that game taste is getting it on ice quick, i see alot of guys hang them in barns for long periods of time not me, i took my deer at 8:01am on opening day (Rick yes i did fill my tag fast) field dressed and up in the barn by 9 quartered out and in a cooler by 10 . . .made jerky today lol

Rick im not much on sausage, i just use bass pros lil kick and throw in some garlic powder and some other stuff

i'll share my my jerky recipe though if you guys want it . . . it taste good its like a cross between sweet and peppered flavor
 
DJ, Let have the jerky recipe. That jerky is looking good. What kind of dryer do you use? IMO hunting is about processing your own meat also. The only time I have something processed in when I have buck sticks made. I just dont have the equipment to do it myself. But I do my own sausage, link and patty.
 
this is for 2lbs of meat

1 TBLS liquid smoke
1.5 TBLS GARLIC POWDER
1.5 TBLS PEPPER
1 TBLS OF CANNING AND PICKLING SALT
1 TBLS ONION POWDER
1 CUP SOY SAUCE
1 CUP WORCH SAUCE
1 TSP HICKORY SALT
AND IF YOU LIKE IT A LIL SPICY LIKE ME I USE EMMERALDS MIX TO SPICE IT UP A NOTCH *BAMM*

1/8'' MEAT STRIPS

PUT IN DEHYDRATOR OR BAKE IN OVEN UNTIL TOUGH

Way to go fellas, it's on in Ga they are chasing big time. I'm home now but will be back in it soon. I saw about 20 bucks in 3 days fighting, chasing, and grunting. This rut is going to be a good one.

Amen, I always keep mine on ice for a week before I double wrap and freeze it. This is a pic of the little stuff we kill down here. They live off palmetto berries and acorns. That is about all they have to eat!!
