The laterals directly above the hood are some of the worst I have ever seen.

I inspected this place yesterday. Worst downdraft I have ever seen. It is over 35 years old.
Although there are some access doors to the filter housings and plenums (doors on the opposite "waitress side" of the serving line) there are no access doors at all to the horizontal duct that runs...
Ok here is one that begs to be posted.
2 systems 1 solid fuel pizza, 1 main line. Current service just scrapes what ever they can reach every 60 days (yes on a wood oven ).
Pizza has a long lateral in a parking structure with access doors with sumps that drain into drip pans every 8 feet...
I saw this place yesterday.
It is a pizza place and they have a type II hood with no fire system.....someone had the idea to add a deep fryer only it really does not fit under the hood.
So they just shoved it behind the pizza oven and it sits right under their pizza boxes.
I was thinking about...
As I pulled up to this restaurant in a strip mall with a lot of Russian businesses I saw this sign "Titanic Traffic School".
That would not have been my first choice for a traffic school business name.
Ok I saw this yesterday and had to take a photo of it.
In their defense the salamander was not on at the time.....but the place was open for business and all of the other equipment was turned on.
I let them know - firmly and politely - that this might not be a good idea. :eek:
I saw this place last week....the electrical on the roof is full of grease.
Call me psychic but I can just see into the future.....
Lets just say we get hired, clean this place up nicely and then motor short circuts out the next morning.

I saw this scraper stuck in a place that it clearly does not belong.
Anyone have any idea why it is there?
My guess is that it somehow disables the cocking mechanism.
To get the access door open I was standing underneith the door arms above my head pushing up really hard when the door finnally popped open and my nose was about 2 in from a mountain of grease leering at me.
This lady called me because she the other company that just cleaned her hood was in...
Anyone ever seen a "bead blast" done on pool tile.
This guy works hard!!
They use glass beads (looks like sand) and about 50 PSI of pressure.
They have to vacume all the glass beads out when they are finished.
