Heres a good reason for restaurants to have their systems cleaned properly on a regular basis. I don't know how long this had been there but I am sure it wouldn't have happened if the system had been cleaned recently. Maybe it could make a good ad for rooftop grease containment system.

We just finished one a few weeks ago that we pulled out about 2500 lbs from. This system alone was about 1400. I should start charging by the pound :D
