Roger says look at the fine print about details
I was approached by a national company once. The prices were low, get used to that, thats their business model and how they attract customers. But this particular companys contract had a statement that said I would not get paid until the customer and the national service company are 100% satisfied with the job...........I passed.

Involvement of the prime contractor. How much of the work is the prime contractor doing?
What percentage of the contract is the prime contractor keeping before passing the remainder on to the sub contractors? Unhappy subs are far less reliable.
Credit check on all contractors and sub contractors. If they are not paying their bills, they are not going to last. Also, there is historically a higher propensity of dishonesty among those that do not meet their financial obligations.
Criminal background checks and UA's on all contractors, sub contractors and their employees. Even if someone is working outside at a facility, it helps them become intimately aware with corporate routines.
What type of training is the contractor supplying to the subs, and their employees in the performance of the contract?

There, that is a start.

I heard part of that line from a few hotel owners that are of middle eastern nationality and I had a bad gut feeling so I passed.

You have to listen to those gut feelings, they will help you.
